Utterly Butterly Paneer !

Paneer Makhanwala,cottage cheese,paneer makhani,kasoori methi


A simple dish ready in minutes,and tastes like the dhabe wala paneer!

This dish has no garam Masala's ,the only strong flavor being that of green 
cardamom.Its a simple dish and the kids just love it when made non-spicy .
But i made it spicy this time!

Ingredients :

250 gms Paneer (cottage cheese)
2 tomatoes chopped in fat chunks
2 medium sized sliced onions 
4 garlic flakes (do not chop)
2 inch piece of ginger
2 green cardamoms 
1 tsp red chilly powder
salt
1/2 cup milk
Butter

Method:
Cut the paneer in small pieces n soak it in milk n keep aside.Heat some butter 
+ 1 tsp of oil in a kadai  (pan).Add the onions n saute till translucent n pink
 (do not let it turn brown).Now add the ginger, whole garlic flakes n tomatoes.
Mix in the salt n red chilly powder n saute till the tomatoes are well done.
Take off heat n let this masala cool a bit. Now grind it to a paste along with the 
Green cardamoms .Saute this paste for two minutes n now add in the paneer 
along with milk n let it simmer for 5- minutes .Garnish with kasoori methi n 
enjoy!!U can add in cream as well if u wish to..

Khatti-Meethi Dal wit a Twist of Peanuts!

 Khatti-Meethi Dal wit a Twist of Peanuts!

Usually once the Dal(Split red gram)  is cooked we add the Tadka (tempering) 
later.But this recipe calls for it first n is ready in minutes.

Ingredients:
1 bowl Arhar dal (soaked in water)
4 tomatoes (grinded)
1tbsp grated ginger
1tsp mustard seeds
Pinch of heeng(asoefetida)
1/2 tsp haldi (turmeric)
1tsp coriander powder
1tsp red chilly powder
1 inch piece of jaggery
Handful of non roasted peanuts
Salt
Kadi patta (curry leaves)
Coriander leaves
lemon juice

Method:
Heat some oil in a cooker, temper the heeng, mustard seeds, kadi patta, grated 
ginger, haldi, salt n red chilly powder.Add in the grinded tomatoes n jaggery n
 saute well till it leaves oil.Add in the soaked dal n non-roasted peanuts.Pour in 
3-4 glasses of water n give it 5 whistles.Once done open the lid , mash the dal a
 bit n garnish with coriander leaves n lemon juice !Enjoy
Method:
Peel the tinda's n make two slits diagonally. Fill them with the dry masalas(keep aside the left over masala).Heat oil in a kali kadai, add the tindas n cover with lid.After 5 minutes, turn the tindas , add the sugar n left over masala n saute for 5minutes.Now add a lil water (2-3 tbsp).Cover n cook till the tinda's are well done n liptoed with the masala.Enjoy with hot chapatis!!
Method:
In a blender put in the oreo biscuits (full biscuits wit cream) n milk.Give it a gud blend.Grease a borosil bowl with olive oil or butter n keep aside.Now mix the Eno in the chocolate mix n immediately pour the batter in the bowl.Put it in the Microwave on simple microwave mode for 5 minutes.Take it out n let it rest for 15 minutes .Once done enjoy wit ice cream or fresh cherries!

Butter Sponge Cake !


After a long time I finally made Mum’s Recipe of Butter Sponge Cake.One cake recipe that can never go wrong n this would always get over by the time Mum would want it to cool down! Spongy n Yummy to the core….

Ingredients:
250 gms Maida
250 gms Butter
250 gms Sugar (grind the sugar )
½ cup milk
5 eggs
1tsp Baking powder
½ tsp Baking soda
1 ½ tsp vanilla essence

Method:
Preheat the oven at 220 degrees.Sieve the Maida,baking powder n baking soda n keep aside.Beat the Butter,powdered Sugar n Milk till soft .Seperate the Egg yolks n keep aside. Whisk the Egg whites till it forms sharp peaks n is fluffy.Now add the Egg whites first to the butter mixture n beat well ,then add in the vanilla essence n egg yolks.Once mixed well,add in the maida mix slowly (do not use the beater,mix with a spatula) cut n fold .Once done pour the batter to a greased tin.Bake at 200 degrees for appx 30- 40 minutes.When ready enjoy this delicious cake !!

Petha wit Mirch ka Tadka!

A sweet, tangy n spicy recipe wit least masalas.

Ingredients:
1/2kg petha ( pumpkin, take a ripe one)
1 tsp saunf (fenugreek)
1/2 tsp methi seeds
1/2 tsp kalonji (onion seeds)
1/2 tsp amchoor powder (raw mango powder)
Salt
1/4 tsp sugar
Oil

Tadka:
1 tsp ghee
1/2 tsp red chilly powder
2 dry red chillies


Method:
Peel the pumpkin, discard seeds n cut in small size chunks.Heat oil in a kadai,once hot temper kalonji, saunf n methe seeds together for less than a minute (do not let it turn brown).Add the chopped pumpkin n salt, saute n cover wit lid.Add a few tsps of water in between.Once the
 petha is almost cooked add in the amchoor n sugar n mix well.Half the petha wud be in chunks n half kinda mashed...Ur Yummy petha is ready, now time for a tadka.Heat 1tsp ghee , add two dried red chillies. Once it turns dark red, take off heat and add 1/2 tsp red chilly powder.Add this tadka to the petha n enjoy it wit Poori ,Dahi n onions on the side

Corn Cobs with Coconut n Peanuts !

Corn Cobs with Coconut n Peanuts !


Another favourite from Mom's recipes.Juicy n succulent corns dipped in thick coconut 
gravy !! You have to make this dish to enjoy the beautiful flavours n textures in it.

Ingredients:

2 corn cobs cut into small pieces (use fresh n soft corn cobs)
Half a coconut
Coriander leaves
1 1/2 tbsp besan (gram flour)
5 cloves of garlic (chopped)
1tsp mustard seeds
1/2 tsp haldi (turmeric)
Curry leaves
Chopped Green chilly
Salt
1/2 cup Coarsely grounded roasted peanuts

Method:

Place the corn cobs in a pressure cooker ,add a tsp salt n pressurize wit 3-4 whistles.

Once done,strain n keep the cobs aside ( keep half cup of the water as well).Peel n
 Grind the coconut n few coriander leaves wit some water to a fine paste n keep aside
 too.Now heat some oil in a Kadai n splutter the mustard seeds,curry leaves,chillies n
 haldi.Add the besan n cook for 3-5 minutes on low flame ,stirring continuously(do not 
allow it to turn too brown).Now pour in the coconut mixture, corn cobs + half cup of the 
strained water,chopped garlic ,salt n Coarsely ground peanuts.Give it a nice boil n garnish 
wit coriander leaves. Enjoy this amazing dish by itself only...simply dip the corn cobs in 
the yummy coconut gravy n get the flavour of peanuts,corn n chillies !!Yummm is the word
 for this dish....
