Pumpkin soup

Pumpkin n Onion Soup!

Ingredients:

400 gms yellow pumpkin (peeled n chopped in big chunks)
1 small onion sliced
1/4th tsp grated ginger

1 clove garlic
Mixed herbs
Salt
1 tsp butter+ 1 tsp oil
1 veg stock cube
Coriander leaves
Lemon juice
Water

Method:

Heat oil+ butter in a pressure cooker,Add in the onion, ginger,garlic pumpkin,salt n coriander leaves.Saute for a minute and Add enough water and allow it to pressure cook for 2 whistles.Once cool,blend the mixture and strain it well.Heat the soup and add in the veg stock cube,herbs n lemon juice.Enjoy it on a cold winter evening 

Chicken sukkha

An amazing recipe.....

Ingredients: 
Marination:
1 kg chicken
2tbsp thick curd
1tbsp garlic paste
1 tbsp ginger paste
1/2 tsp black pepper powder
Salt
A little oil
..................................

4 onions sliced 
2 tomatoes pureed
3tbsp dry dessicated coconut
2-3cloves
1 small cinnamon stick
2-3 green cardamoms
3 dry red chillies
1star anise
Oil

Method: 
Marinate the chicken for 3-4 hours with the ingredients mentioned under marination.

Heat oil in a kadai and splutter the red chillies,cardamoms,cinnamom,star anise and cloves.Now add the onions and cook till golden brown, Add in the dry coconut and cook for 4-5 mins.Once done cool this mixture and grind it to a coarse paste and keep aside.Heat a little oil and add in the marinated chicken ,cook well and add few splashes of water till 80%done.Now add in the coarse brown onion paste and cook till mixed well.Adjust salt n/chillies/garam masala as per taste and add the tomato puree.Cook well till oil separates ,add few splashes of water if a lil thick gravy needed.Garnish with coriander leaves....Enjoyeee wit hot chapati's!

Raw Mango,Chickpeas-Quinoa Salad!

Raw Mango,Chickpea-Quinoa Salad! 
A protein packed fresh tangy salad- just the right dish to start your day with!!

Ingredients:
Boiled chickpeas
Sliced raw mango 
Sliced carrots
Pomegranate
Steamed quinoa ratio being 1: 2
Crushed peanuts.
Dressing: olive oil,herbs,lemon,honey,salt n pepper.(mixed together)

Method:
Process for cooking quinoa- Take 1/2 cup of quinoa.Rinse it twice.Boil 2 cups of water ,add in a pinch of salt n little oil.Now add in the quinoa ,cover and cook till well done.(small white tiny tails can be seen ).
Combine all ingredients together ,toss in the dressing n enjoii

Ashgourd wit Chickpeas n spinach in Coconut Curry!!

This dish was my own creation.A Healthy protein filled  Veg dish😉
Ingredients:
1/2 kg Ashgourd(raakh lauki), peeled and deseeded
1 bowl boiled chick peas
1bowl spinach
1 tsp grated ginger
1/4tsp turmeric powder
Salt
1tsp white urad dal
1 tsp mustard seeds
Oil
1green chilly
1 cup coconut milk
Method:
Pressure cook the soaked white chickpeas (chanas)wit salt and little water for 2-3 whistles.keep this aside.Now take a deep vessel and heat little oil .Saute the ginger and urad dal till brown now add in mustard seeds,green chilly .Add the chopped ashgourd with salt and turmeric.Add a lilttle water ,cover and cook till the ashgourd is more than half done.Now pour in the chickpeas along with it's liquid.Cook this for 5minutes and now mix in the spinach leaves and coconut milk.Let this simmer till you get a good consistency.Enjoi with stramed rice!!!yummy

Jhajhariya

Jhajariya- Fresh corn & Milk fudge with caramalized makhane ! A delicacy from rajasthan!!


Another awesome dish learnt at the Master chef class at Made in Punjab! The dish was served with caramalized popcorn but I replaced it with Makhane ( lotus seeds or fox nuts)

Ingredients:
200 gms fresh corn coarsely grated
50gm ghee
100gm khoya
100ml milk
15gm roasted almonds
30gms raisins
15gm roasted cashewnut
2gm cardamom powder

Method:
Take ghee in a non stick pan and add grated corn (fresh corn from the cob used).Cook over a low flame for 20mins stirring continuously till it turns light brown in color.Add milk, khoya a lil water, cardamom & continue cooking on slow flame till reduced.Add 2spoons of sugar (adjust as per taste) & cook till its mixed well.Remove from pan amd mix the nuts.

Caramalized makhane( lotus seeds):
Method:
Dry roast 1bowl makhane n keep aside.In a pan take 50 gms jaggery and let it melt.One its reaches a consistency of being sticky n thread like , break the makhanas a bit n mix well for 2minutes and take off heat.

**Same way if u want caramalized popcorn, just caramalize sugar and mix with plain popcorn

Serve the Jhajhariya with vanilla icecream n a caramalized makhane.Yum it is

Basil Chicken

Basil Chicken!

This is one recipe which is light, easy to make & is full of flavors. My ultimate favourite dish.

Ingredients:
I kg thigh boneless chicken (cut in small bite size pieces n marinated for 15minutes in 1tbsp soya sauce)
10-15 cloves of chopped garlic
2 pieces star anise
1 chopped onion
1tbsp oyster sauce
2tsp soya sauce
2-3 dry red chillies
2 chopped red chillies
Juice of 1lemon
Basil leaves 5-6

Method:
Heat oil in a pan, temper the dry red chillies n star anise.Saute the onions on high heat for 5-7minutes.(u can omit onions if u wants , however I like putting it as it gives in a base n adds in to the little curry).Now put in the chicken, garlic n red chillies together n allow it to cook till chicken is tender n leaves water.Add in all ur sauces,(no need for salt as oyster sauce is salty enough).Once mixed well n u have a slight gravy, put in the big basil leaves n cook for 2-3mins more.Take off the heat n pour lemon, n enjoy this light dish with steamed rice .Yummmy!

Carrot Pickle

Mum's recipe of Gajar ka achaar with Mustard. 

An amazing and super quick recipe.....
.
Ingredients: 
1/2 kg carrots,
1 1/2 tbsp mustard oil
1tbsp coarsely ground brown mustard seeds,
salt 
1/2 tsp turmeric powder

Method: Clean n Peel the carrots (do not wash), Cut in small slices and add all above ingredients,mix well n put in a glass jar. Keep this jar in sunlight for a day & ur yummy pickle is ready. ( The mustard in it adds the zing to this achaar, however this needs to be consumed within 5-6 days,but believe me it gets over in 2-3 days only...enjoy..

Ingredients:
1.Mutton 500gm
2.Black Cardamom 3
3.Cloves 4
4.Green Cardamom 4
5.Fried Onion Paste 1 Cup
6.Yogurt 1 cup If sour,use less or as desired.
7.Sonth Pwd 3 tsp
8.Saunf pwd 4 Tsp
9.Kashmiri Red Chilli Pwd 4Tsp
10.Whole Kashmiri Chilli 4 in nos
11.Hing
12.Salt 
13.Mustard Oil

Preparation:
Smoke Mustard Oil and allow to cool a bit. Add Hing followed by whole spices. When the spices are fragrant add the Fried Onion Paste. Add the Mutton Pieces and sear for 4-5 Minutes. Whisk the Yogurt well with all the Pwd Spices and Salt. Add ,stirring fast till Yogurt Boils. Lower flame and cook for 10 minutes. Add a little water and cook Covered or in a pressure cooker till Mutton Tender. 
Serve Hot with Steamed Rice

Coffee Cake

A simple and yummy Eggless Cake !!

Ingredients:
Dry ingredients(sieve together n keep aside)
Maida: 1 1/2cup
Cornflour 1tbsp
Baking soda: 1tsp
Baking powder: 1tsp
Salt :a pinch
Cocoa powder:3 1/2 tbsp

Wet ingredients:
1tsp instant coffee dissolved in 1/2cup warm milk
Refined oil: 1/3cup
Vanilla essence :1 tsp
Vinegar 1tsp
Powdered sugar 1 cup

Method:
Preheat oven at 180degrees. Now mix in the sugar with oil till well dissolved.Add the vinegar,vanilla essence and coffee mix to it.Mix well. Now slowly cut n fold in the dry ingredients .Once done pour this mixture in the greased tin and bake for 25-30 minutes at 180 degrees.Check with a toothpick once done ,remove it out and allow it to cool .enjoy wit choco sauce or fresh strawberries.enjoi

Carrot Cinnamon Cake

A lovely recipe for a moist cake...do try it!!


Recipe:
WheatFlour: 2 1/4 cup
Ground Sugar: 1 3/4 cup

Grated carrots -3cups
Walnuts - 3/4th cup
Eggs- 4

Oil- 1 cup
Cinnamon powder- 1tsp
Baking powder-1tsp
Baking soda- 1 1/2 tsp 
Pinch of salt

Method:
Preheat oven at 200degrees.
1.Sieve together the dry ingredients 
together.
2.Beat oil + sugar till smooth.
3. Keep adding one egg at a time and beat well.
4.Now fold in the dry mixture and add in the grated carrots and walnuts.
5. Pour the mixture in a greased tin or 2 loaf tins and bake for 30-40 mins at 200 degrees.
