Baked Spanish Omelette wit Pepperoni,Baby Spinach & Potatoes


In Spanish, this dish is called tortilla de patatas or tortilla espaƱola
to distinguish it from a regular Omelette. The Spanish tortilla
(Tortilla de patatas in Spain) is the most common gastronomic
specialty found throughout Spain. While there are numerous regional
variations, the most common version is the one made with eggs,
potatoes and onion.

Ingredients:
6 eggs
1 medium size potato (peeled n cut in thin strips)
1 cup baby spinach leaves
6 slices of pepperoni
1 cube grated cheddar cheese
2 tbsp milk
Seasoning:  Salt, Pepper n  green chillies (less salt added as pepperoni
n
cheese are a bit salty)

Method:

Pre heat oven at 180 degrees. Heat  oil in a Non-stick pan n cook the
potato strips on medium heat(do not let it turn brown),once cooked
remove n keep aside n nowadd the pepperoni to the same pan .Cook
for two- three minutes on both sides ,add the spinach leaves on a side
n take off heat (we don’t want the spinach to wilt).Till the potatoes,
spinach n pepperoni cool,in the mean time break 6 eggs in a bowl n
whisk a bit with the seasoning.Now fold in the potatoes, baby spinach ,
grated cheese & only 2 slices of chopped pepperoni  n keep aside the
other 4 slices of pepperoni which shall be added midway.Grease a Tin
with olive oil ,pour the egg mixure n bake at 150 degrees for appx 12-15
minutes .Once the omelette is half cooked add in the sliced pepperoni on
the top n bake till well done n set. Enjoy this delicious dish with a Glass
of Fresh Mausambi Juice n Toasted bread!!!
