Cucumber-Mint Lemon Twister

Cucumber-Mint Lemon Twister !

In the  Summers,what can be more refreshing than a Cucumber-Mint 
Lemon Drink that helps u Detox,Digest n Rehydrate ur body!!

Ingredients:(serves 2)

Half cucumber
3-4 mint leaves
1tbsp sugar
Juice of 2lemons
A pinch of roasted jeera powder or jal jeera mix
Salt
Ice cubes
Water

Method:
Blend all the above ingredients in a mixer n ur yummy summer drink 
is ready!

Pan Roasted Chicken wit Grilled Veggies !

Pan Roasted Chicken wit Grilled Veggies !
A beautiful dish with juicy and succulent chicken.
Recipe inspired by : Montaut henderson

Marinate the chicken with the  ingredients
mentioned below for appx 3-4 hours

4 chicken drumsticks (appx ½ kg)
2 tbsp barbeque sauce
½ tsp oregano
½ tsp mixed herbs
Lemon juice
½ tsp coarsely ground black pepper
½ tsp red chilly flakes
1tbsp olive oil
¼ tsp salt (as the sauce is salty)


For Grilled veggies:

I used  zucchini cut in long strips ,beetroot cut in thin
slices n mushrooms in big chunks.Marinate the zuchhini
& mushrooms together  wit salt,pepper,lemon juice,olive
 oil n dry parsley.Use the same marinate for beetroot but
put it in a separate bowl as it tends to leave its color.Keep
 the veggies aside for 15 minutes.
(The beetroot adds in a beautiful flavour n texture)

Method:
Grill the veggies for a few minutes n keep aside.
Retain the leftover marinate/juice left by the veggies.

Mashed potatoes:

Boil the potatoes really well and then mashed them. Add a little
butter in a non stick pan and add the mashed potatoes blending it
 well with the butter, then add half a cup of milk.Mix really well and 
add salt, fresh ground pepper, a little oregano and finally a little
 grated parmesan cheese. Mix and keep aside.

 Pan Roasted Chicken:

Heat some butter in a pan and roast the marinated chicken well
 on both sides.Pour a little of the marinade left in the bowl and
 retain the rest.Once the chicken is done ,plate it on a bed of
 mashed potatoes n Grilled veggies  n pour in the yummy sauce!!

For the sauce:

Heat a little butter in the same pan,pour in the left over
marinade of the  veggies & chicken.Mix in a tbsp of fresh
Cream n ur yummy sauce is ready!

Enjoy this with a glass of Wine or chilled Beer ;)

Mutton Kaali Mirch (with no onions/tomatoes)

Mutton Kaali Mirch 

A finger licking Mutton starter dish, without onions or tomatoes! Easy to make 
n has a burst of Flavors!

Ingredients:

½ kg mutton( only chaamps/chops n Nalli/bone marrow)
3tbsp Ghee
½ tsp red chilly powder
2 green cardamoms
1 cinnamon stick
2 cloves
1 ½ tbsp coarsely ground Black pepper
Juice of 2 lemons
1 cup water
salt

Method:

Heat Ghee in a pressure cooker. Add in the green cardamoms,cloves n 
cinnamon stick  followed by red chilly powder.Now  add the mutton 
chops n salt,sauté on high heat for 5-7 minutes to seal the juices.Cook
 the mutton for another 5 minutes and pour in 1 cup of water.Mix well 
n allow it to pressurize for 3 whistles only, on medium heat.Once done ,
open the lid post 10 minutes n place the cooker on the gas again.We now
 have to dry the gravy so tht it sticks to the mutton,to thicken it pour in
 the lemon juice n half of the black pepper.Mix it with the mutton well.
Once the gravy reduces to more than half,take it off gas and mix in the
 rest of the balck pepper.Finger licking mutton is ready!!

Baby Potatoes in Mustard Oil !

I simply like this dish as its really easy to make n I love having the baby
 potatoes with its skin…..Each time I visited my in-laws house in Lucknow,
this along with poori was packed for us on our way back to be had in the Train!!

Ingredients:
1/2kg Baby potatoes (wash n cut in 3- 4 pieces ,retain the skin)
2 tbsp Mustard oil
2 tsp coriander powder
1 1/2 tsp amchoor powder(raw mango powder0
1tsp jeera (cumin seeds)
1tsp rai (mustard seeds)
½ tsp red chilly powder (inc as per taste)
¼ tsp hing (asoefetida)
Salt
Method:
Heat the Mustard oil in a Kaali kadai ( iron kadai) till it reaches its
 smoking point,temper jeera,hing n rai.Add in the potatoes, cover and 
cook till well done. Add in the chilly,amchoor ,salt n coriander powder
 n Toss till all mixed well. Goes well with Dal chawal also…..Enjoy!!


Murgh Lal Mirch!

Murgh Lal Mirch!

No recipe that I followed, just cooked this dish by following my insticts 
totally...had some packed paste of Kohlapuri tetcha ( a paste made with
 lots of red chillies, garlic n lime)n it was Yummmm!! (made a very small
 quantity, as It was just for myself)

Ingredients:
1 chicken leg thigh(cut into 3)
1star anise
2 green cardamoms
5-6 basil leaves
1tbsp of kohlapuri tetcha (chilli garlic paste)
6-7 flakes of garlic (chopped)
1 onion sliced
oil
( no need for salt as the chilli paste has salt)
Method:
Marinated the chicken with the kohlapuri tetcha paste n a lil oil for 1/2 hour.
Heat oil in a kadai n temper the star anise n cardamom.Add in the sliced 
onions n saute till golden brown (do not allow it to turn tooo brown).Now 
add in the chicken and allow it to cook well, add a few tbspn of water in between
 so that the masala doesn't stick to the pan.Once the chicken is cooked well , just
 2minutes before u take it off the gas, add the chopped garlic n basil leaves.Give 
it a good stir n take it off the gas n cover it for 5minutes.And enjoy the lovely 
flavor of garlic, basil n chilli paste...
