A beautiful recipe I learnt at a
master class by Himanshu Saini.An amazing Chef
who creates Magic in hisdishes
by mixing in the right flavours that too with a twist!
Ingredients:
Banana leaves
A little oil
Masala Paste (Grind the below to a
fine paste,I kept mine slightly coarse)
2 cups coriander leaves
½ cup mint leaves
2 green chillies (I added in a bit of
chilli flakes too)
1cup dessicated coconut
½
tsp sugar
1 tbsp vinegar/lemon juice
Salt
6-7 flakes of garlic
Small piece of ginger
1 tsp
oyster sauce (optional,but I loved this twist)
½ tsp cumin powder
Method:
Apply salt and lemon to the fish and keep aside for 10 mins.Wash
and Cut the fish into medium size pieces .Take square cut pieces of the banana
leaves.Apply a drop of oil on the banana leaf.Spead a little paste on the
leaf,place the fish piece on it and again top it up with the paste.Fold the
banana leaf and make small parcels with a toothpick /thread.Steam the parcels
in a steamer for appx 10-12 mins.Serve with lemon slices and enjoy!!!!
