Lemon Cake with Lemon Grass!

Saw this recipe doing rounds on the net.But I thought of adding in a twist using Lemon Grass and believe me the taste was fantastic! The freshness and flavor of the lemon grass is just beautiful

 Ingredients:
1 stalk of lemon grass (just the lower soft part)
3 eggs at room temp.
1 cup castor sugar
2 tbsp soft butter
1 tsp vanilla
1/3 cup fresh lemon juice.
½ cup olive oil

Sieve and keep this ready:
1 ½ cup flour
½ tsp baking powder and ½ tsp soda.
½ tsp salt


Chop the lemon grass stalk and Grind it with the castor sugar. Beat the butter,oil and sugar  till soft.Now add in the lemon juice, vanilla essence and eggs one by one till well blended.Now add in the flour mixture and cut and fold it in well . Pour into a loaf mould and bake for 45 min at 175 deg. Cool on a wire rack and dust with powdered sugar once cooled and then slice.

Patrani Macchi

A beautiful recipe I learnt at a master class by Himanshu Saini.An amazing Chef  who  creates Magic in hisdishes by mixing in the right flavours that too with a twist!

Ingredients:
 400 gms Boneless Fish (Betki fish)
Banana leaves
 A little oil

Masala Paste (Grind the below to a fine paste,I kept mine slightly coarse)

2 cups coriander leaves
½ cup mint leaves
2 green chillies (I added in a bit of chilli flakes too)
1cup dessicated coconut
½  tsp sugar
1 tbsp vinegar/lemon juice
Salt
6-7 flakes of garlic
Small piece of ginger
1 tsp  oyster sauce (optional,but I loved this twist)
½ tsp cumin powder


Method:

Apply salt and lemon  to the fish and keep aside for 10 mins.Wash and Cut the fish into medium size pieces .Take square cut pieces of the banana leaves.Apply a drop of oil on the banana leaf.Spead a little paste on the leaf,place the fish piece on it and again top it up with the paste.Fold the banana leaf and make small parcels with a toothpick /thread.Steam the parcels in a steamer for appx 10-12 mins.Serve with lemon slices and enjoy!!!!

6 Min Eggless Orange Cake!!

Another simple 6min Eggless cake...Did a few trials and finally worked up on this recipe...its easy n yumm!! Total cooking time 15minutes..wallaah

Ingredients:
1 cup Nestle curd (any brand of thick curd)
3/4th cup brown sugar
1/2 cup cooking oil
1 cup orange juice (I used fresh kinoo juice,
appx 2 kinoo's)
1tsp orange essence
Few drops of  orange color
1/2 tsp fennel powder (saunf)

Dry mix( sieve the below and keep aside) :
2 cups maida
1/2 tsp baking powder
1/2 tsp baking soda

Method:
Grease a borosil bowl with olive oil and keep aside.Take a deep bowl and mix the curd, brown sugar and oil.Mix it lightly with a beater till the sugar dissolves.Now add in the orange essence, orange color, fennel powder and orange juice.Give it a nice mix.Now add in the sieved dry mix gradually n fold n mix in slowly till you a get ribbon like falling batter.(The batter is runny so don't worry).
Pour the batter in the borosil bowl and put it in the microwave on simple heating mode for 6 minutes only. (Plz note just 6min just like we heat food in the microwave).Once done take it out and let it rest for 15 minutes.After 15 min take a knife and loosen it from the sides gently and flip it over a plate and the yummy and moist cake is ready...Enjoyyy

Spicy Shalgam ka Saag (Turnips)

Teekha Shalgam ka Saag( Turnips) !

Ingredients:
250 gms turnips
1 onion ( sliced)
2 tomatoes( grated)
a little bit of ginger (grated)
1tbsp ghee/oil (I used ghee)
2 green chillies (chopped)
1/2 tsp red chilli powder
1cup chopped coriander leaves
1/2 cup water
A small piece of gur (jaggery)
A pinch of asoefatida (hing)
Salt

Method:

Peel the turnips and cut them in thin slices and keep them immersed in
 water for a while.Heat ghee in a pressure cooker, add in the hing , 
green chillies and ginger and saute for a min.Now add in the onions 
and saute till translucent and pink in color, followed by the tomato puree and coriander leaves.Now add in the red chilly powder, salt and gur and saute the masala well.Once the tomatoes leave oil , add in the turnips (discard the water they were immersed in).Mix well and pour in 1/2 a cup of water ( This much water is enough as the turnips shall leave water too) .Pressure cook on a
 medium flame for 1 whistle .Once done take off heat and allow it to cool.
Open the cooker after 15mins .Put in on heat again and mash the turnips a
 little so that the water dries and mixes well with the masala.Once done add a small spoon of butter and enjoy with hot chapatis!
